Cajun Salmon, Spinach & Greek Salad
For the last 6 weeks and counting, I have been Intermittent Fasting on the 18:6 ratio and eating only at 10.00 am and 17.00. Here’s a fast and easy recipe for those of you looking for health gains with minimum time in the kitchen.
Blackened salmon with spinach, tomato, onion, feta and a pesto dressing.

Recipe
Cover salmon in Cajun spice, sear in a pan and finish in the oven. Meanwhile, put fresh spinach and salad on the plate and add pesto.
15 minutes in the kitchen and you’re done! Make a batch of salmon and salad and it will last for days.
